Cauliflower-Cheese Soup


Ingredients:

1/3 cup water or chicken stock
1 cup cauliflower, chopped
1 cup cubed potatoes
1/2 c finely chopped celery
1/2 cup diced carrots
1/4 cup chopped onions
Salt and pepper to taste
4 ounces shredded cheddar cheese
Add fresh garlic

Directions:
In a large saucepan, combine all ingredients but cheese. Cook until tender. Put in blender or food processor and puree. Pour back into pan, add cheese and stir until melted. Serve warm. Delicious!
