Chicken Curry

Best recipe for someone with a cold. SO EASY.

  • 1 or 2 medium chicken breasts
  • 1 tbsp olive oil
  • 1 large onion
  • 2 cans stewed tomatoes
  • 1/2 tsp pepper
  • 1/8 tsp ginger
  • 1/4 tsp curry powder
  • 1/8 tsp ground cloves
  • 1/4 tsp turmeric
  • 1/4 tsp paprika
  • 1 2" cinnamon stick
  • 1/4 tsp. coriander
  • Salt (about 2 tsp) and vinegar (about 1 tsp)to taste
I start out by putting olive oil in the bottom of a pot, then add onions and spices, and saute. Then I add chicken (I have even just pulled chicken straight out of the freezer) and stewed tomatoes, and dump in enough water to cover the chicken. Get boiling, turn down heat, simmer for an hour. Serve over rice.
